Rye Bread


280 gm Bread Flour
180 gm Dark Rye Flour
8gm Yeast
7 gm Sugar
6 gm Salt
3 Tbsp Bread Improver
40 gm Olive Oil
240 ml Pickle Juice (warm)
80 ml Warm Water (warm)


  1. Mix all dry ingredients together, then add the water, pickle juice and oil and knead into a dough.
  2. Knead on a floured surface for 10 minutes or until the dough is smooth and elastic.
  3. Shape and place in a prepared tin or onto a baking sheet covered with parchment paper.
  4. Put in a warm place to rise, until doubled in size.
  5. Bake at 400° C for about 30 minutes.


  • This recipe is particularly nice made with sweet pickle juice.
