Avocado Ranch Dressing


2 Yolks
75 gm Lime Juice
25 gm White Wine Vinegar
25 gm White Vinegar
1/2 tsp Salt
1/2 tsp Ground Black Pepper
1 Tbsp Chopped Onion
1/2 tsp Xanthan Gum
1 Avocado (large)
500 gm Canola Oil
125 gm Buttermilk
125 gm Sour Cream
1/2 tsp Ground Cumin
1/2 tsp Dried Dill Tips
1 tsp Dried Parsley Flakes


  1. In a food processor, blend the yolks, lime juice, onion, vinegars, salt, pepper.
  2. Add the xanthan gum and continue blending.
  3. Add the avocado and continue blending.
  4. Slowly add the oil whilst still blending.
  5. Add the sour cream & buttermilk and continue blending.
  6. Add the cumin, dill tips & parsley and blend a little more


  • A white tarragon vinegar would also be ideal.
  • Makes 1 quart plus a little extra for tasting, or dipping bread.
