Caesar Dressing


4 Yolks
2 Tbsp Dijon Mustard
25 ml White Wine Vinegar
100 ml Vinegar
2 Tbsp Fresh Grated parmesan
1Tbsp Dry Powered Parmesan
4 Anchovy fillets
1/4 tsp Fresh Garlic, minced
1/2 tsp Xanthan Gum
850 ml Canola Oil
200 ml Warm water (body temperature)
Salt & White Pepper


  1. Blend the yolks with the mustard, vinegar, parmesan, anchovy and garlic in a food processor.
  2. Add the xanthan gum and continue blending.
  3. Gradually whisk in the oil while continually blending.
  4. Add the warm water slowly and continue blending.
  5. Season with salt & pepper.


  • Use the 'Good Oil'
  • Makes about 1 1/2 Quarts
