Lime Mayonnaise


7 Egg Yolks
250 ml Lime Juice
1tsp French Mustard
1 Litre Olive Oil
50 ml Hot Water
5 gm Salt


  1. Blend Egg Yolks, Lime Juice, Mustard, Salt And Pepper In A Food Processor.
  2. Gradually Add Olive Oil Then Hot Water.
  3. Correct Seasoning If Necessary.


  • This recipe is fantastic with seafood or Vietnamese summer rolls.
