BBQ Pulled Pork

Ingredients

1 Tbsp BBQ Seasoning
1 tsp Chili Powder
1/4 tsp Red Pepper Flakes
1400 gm Pork Loin (Trimmed of fat and silverskin)
1 Onion (small, coarsely chopped)
2 Cloves Garlic (crushed)
190 gm Golden Syrup
70 gm Prepared Chili Sauce
40 gm Apple Cider Vinegar
20 gm Yellow Mustard
4 gm Salt
1/4 tsp Fresh Black Pepper
Few Drops Tabasco

Method

  1. Preheat slow cooker to 200º F
  2. Combine bbq seasoning, chili powder and pepper flakes in a small bowl.
  3. Cut the pork into 3 pieces and rub the meat evenly with the seasoning.
  4. Place the onions in the bottom of the preheated cooker, and place the pork pieces on top of the onions. Spread crushed garlic on top of the meat.
  5. In a small bowl combine the golden syrup, chili sauce, vinegar, mustard, salt, pepper and tabasco. Pour the sauce evenly over the meat, cover and cook for 5 to 6 hours, or until the meat is very tender. Turn off the slow cooker.
  6. Allow the cooked mixture to cool for 30 minutes with the lid off.
  7. Place the mixture in an electric mixer bowl fitted with a paddle and mix on slowest speed to shred the meat.
  8. Serve immediately with split rolls or keep warm in a bowl
